This is an idiom which is useful and is in my mind of proverbial wisdom.

Generally, the expression is used to say that the real worth, success, or effectiveness of something can only be determined by putting it to the test by trying or using it, appearances and promises aside—just as the best test of a pudding is to eat it.

In short, any claim or promise is only to be believed once you've tested and seen the result.

Let's try it.

This laptop computer has the highest specification. The proof is in the pudding, I've got one and it is extremely fast.

That bank says it pays a very high interest rate. The proof is in the pudding. I have an account there and the claim is true.

This restaurant claims to have the best pudding in the world. The proof is in the pudding. I will have to try it in order to verify if it is true.
