May I see the English translation?
I really like the locally made food of China. Chinese food in mainland China has always been sourced from the best local foods for that season. Depending on what's in-season, you'll be surprised at what your local chef will cook up! If I'd have to choose a single dish, then I'd have to choose ’麻婆豆腐‘ ! If made properly, it will give the eater a sleepy feeling, which may or may not cause you to pass out for a day or two while your body heals itself! But, this experience can only be found in China, or if you're very lucky, authentic Chinese restaurants in American Chinatowns! If I'm going to go traditional, I'd have to say '北京烤鸭‘ ! Nothing beats the taste of Beijing Duck in Chaoyang District! Yum!
Ah! Both are popular talents. Eat a hundred times and you won't hate it!

Wow, this is really interesting, Jona! Thank you for posting. I didn't know there were so many different types of Chinese cuisine. I mean, I know China is a huge country, but here in Spain we don't get any of that variety. Actually, most Chinese restaurants here seem to offer always pretty much the same dishes: sweet&sour pork, lacquered duck, shark's fin soup, dumplings, egg-rolls, etc.
It may be because the Chinese foods known to the public are these types of foods. If they are other foods, they may not order meals because of the ingredients. Everyone likes different tastes, and it is very difficult to specialize in one kind of cuisine. The real traditional Chinese food is more likely to be lost due to the complexity of the process.
